Enfrijoladas (Taquitos in Bean Sauce)
Enfrijoladas, which can be made with any kind of bean on hand, are eaten all over Mexico. It is the classic, inexpensive meal prepared with nothing more than cooked beans, tortillas, and whatever tortilla filling is handy. As simple as they are, enfrijoladas are delicious, and my family seems to like them just as well as more complex, sophisticated dishes.

INGREDIENTS
- 12 corn taquitos
- 1 cup heavy whipping cream
- (1) 8 oz. can refried beans
- 1/4 cup red chile / enchilada sauce - tomato free
- 4 thin slices of smoked ham
- 1/4 cup concentrated chicken broth
- 1/4 tsp. ground cumin
For garnish:
Shredded cheddar and Monterey Jack cheese
DIRECTIONS
Preheat oven to 400 degrees.
1. Place all sauce ingredients in a blender or food processor, and blend until creamy.
2. Place frozen taquitos in 9x13 inch baking dish.
3. Pour bean sauce over taquitos.
4. Cover baking dish with foil. Bake for 20 minutes.
5. Sprinkle with garnish and serve.
