Eggs El Rancho
4 slices bacon, diced
1/2 cup chopped onion
1/4 cup chopped green pepper
1/3 cup mayo
1/4 cup milk
8 eggs slightly beaten
 
Cook bacon, onion, & pepper until crisp tender, drain off excess fat.  Combine mayo, milk & eggs, pour over bacon - veg mixture.  Cook slowly, stirring occasionally.
