Shoyu Chicken, Hawaiian Style

 

Put 3-4 c. water in pan and bring to boil
Add  2 c. of large pieces ginger root chopped

Add 1 onion cut into quarters
Add 1 1/2 c. brown sugar
Cook on high heat for about 10 minutes or so
Add about 2 cups soy sauce and bring back to a boil
Add several chicken thighs, I like skinless and boneless, after it comes back to a boil turn down to just a bit more than a simmer
Cook anywhere from 1 1/2 to 2 or so hours, the longer the more tender
Serve with brown rice and steamed veggies
Add a bit of what you like to create your own style like cinnamon or orange slices
