Chicken Parmigiana
Chicken Parmigiana (from Amanda Much)

  • boneless chicken breasts
  • 2-3 eggs, beaten
  • smidge of milk
  • bread crumbs
  • spaghetti sauce(at least 1 jar for 6 chicken breasts)
  • enough mozzarella cheese slices for each chicken breast

Heat olive oil in frying pan.  Dip chicken breast in egg and milk mixture and roll in bread crumbs.  Fry on both sides until golden brown.  Place in casserole pan or any 9 x 12 pan (approx. size.)  Cover with spaghetti sauce and top with sliced mozzarella cheese.  Bake for about 10 min. or until done (meat is white all the way through) in 350 degree oven.
