Chicken Salad

Chicken Salad

*These are approximate amounts......I have never followed a specific recipe, you can adjust for taste!

 For 10 - 12 people:

 5 boneless, skinless chicken breasts

Red grapes (about 2 cups...I cut them in half

1 bunch green onions, finely chopped

2 stalks celery, finely chopped

Dill Weed (unless you have "it's a dilly seasoning, I have not been able to find it,) about 3/4 tsp. Adjust to your taste

Slight sprinkle of curry powder

Grated swiss cheese - about 1-1/2 cups...depending on your consistency

Mayonnaise

Salt/Pepper

Boil the chicken breasts until just done.  Shred.  Add grapes, onions, celery, dill, cheese, curry, salt and pepper and toss.  Add about 1 cup of mayo to start...continue adding until it is the consistency you like.  You can adust all ingredients to your taste.  These are approximates...sorry about that but I have always made it by look and taste!  Let me know how it turns out!! :)

Chicken can be shredded in the food processor 1 breast at a time. Just cube the cooked chicken first.

Great recipe!  Looks delicious - Can't wait to use it at the next UMW event, or church potluck!
