This in a forgotten recipe I found that reminds me how I would often run out of eggs to make pancakes with on Saturday mornings and would run down to Shirley Brucia's (on Leslie Court) to borrow some!

2 c. flour
2 TB brown sugar
1 TB baking powder
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1 1/2 cups milk or evaporated milk
1/2 c. mashed banana
2 eggs
2 TB. vegetable oil

Combine dry ingedients in bowl. Mix last four ingredients in a separate bowl.  Than stir together just until moistened (batter will be thick.)  Fry on griddle.  Serve with warm maple syrup or honey-pecan sauce.  Makes 6 large pancakes.

Honey-pecan sauce:  Mix 1/3 c. warmed honey and 1/2 c. pecan halves.
