Take any vegetable, like yellow or green squash, turnips, beets, red onions, carrots, etc. and slice on the thick side (not too thin).  Lay out single layer
on cookie sheet (I cover with foil first); drizzle olive oil and sprinkle a little salt all over them.  Bake at 400 degrees until tender (15-30 min. depending on the thickness). Yummm!
