This is a yummy summer salad that needs time to chill in the frig ahead of time.
Serves 6 1 package mixed white and wild rice
1 TB. fresh lemon juice
3 cups cooked chicken, cut into bite-sized pieces
4 scallions, chopped
1 cup Italian dressing
2 ripe avocados
1/2 cup toasted pine nuts or sliced almonds
1 cup cherry tomatoes
Prepare rice according to package directions. When the rice is ready, stir in chicken and scallions; add dressing and toss well. Pour into a serving dish and chill. Dice avocados and toss with lemon juice. Garnish salad with avocados, nuts, and cherry tomatoes.
