Kale Salad

So here's a really good kale salad recipe, after eating lettuce for over the past half a century, I'm liking a change of pace! Thanks Natalie!

There aren't exact amounts of the last 5 items; it's up to you.


1 bunch of kale, cut off the stem and chop in small pieces

1 c. of cooked quinoa in chicken stock (this stuff makes the salad an interesting texture)

1 ear of corn cut off the cob

Feta cheese

Golden raisins

Pine nuts or sunflower seeds

1/2 cucumber cut in small chunks

Small red onion or shallot


The dressing is olive oil, lemon juice, chopped garlic and Dijon mustard.  Or you can use a bottled vinagrette of your choice, which is what I did.


Mix it all together and chill before serving.
