Awesome Italian Pasta Salad
1 lb. cooked rotini pasta (multi-colored or plain), drained and cooled
2 cups raw broccoli florets, chopped
2 large tomatoes, seeded and diced
6 oz. sliced pepperoni, chopped
1 14 oz. can medium black olives, sliced or chopped
6 oz. block colby-jack cheese, cubed small
1 1/2 c. Italian dressing
1/4 c. finely grated parmesan cheese
1. Add all ingredients except parmesan cheese to cooked pasta and mix well. If too dry add more dressing.
2. Sprinkle parmesan cheese on top and refrigerate.
3. The longer it chills, the better it tastes.
4. For a lighter version, use low-cal/low-fat italian dressing.
