Hummus


This is my recipe for hummus:
(gramma loves it!)
1 can chickpeas, cleaned and drained (or soak and cook your own)
2 cloves fresh garlic, minced
1/4 onion, minced (could also use scallions)
2 tbs sun-dried tomatoes, chopped
1 tbs lemon juice
parsley
ground black pepper
red pepper flakes
small amount of mint
olive oil
Smash chickpeas until smooth (a food processor works best for this). Since I don't have a food processor, I use a fork first and then a hand mixer.
Mix in other ingredients.
Add desired amount of olive oil to make smooth, especially if hummus seems too dry.
Keep in refrigerator.
This is very good on toasted bagel chips, flat bread, or even just toast.

Thanks for the post. One of my college roomates turned me on to this stuff and I'm addicted. My all-time favorite is the Trader Joe's tomato and basil hummus
