You will need:
2 tablespoons margarine or butter
2 small carrots, thinly sliced diagonally (about 1/2 cup)
1 medium onion, chopped (about 1/2cup)
1/4 cup sliced celery
3/4 teaspoon snipped fresh thyme leaves
or 1/4 teaspoon dried thyme
2 cans or jars of Turkey Gravy
Sliced cooked turkey (about 1/2 pound)
Note * I would go to the butcher & have it sliced thicker
4 diagonally sliced pieces Italian bread toasted & opened faced
Note* I would purchase the Colombo french sandwich rolls in sourdough
**In 2-quart saucepan over medium heat, in hot margarine, cook carrots, onion
celery and thyme until vegetables are tender, stirring occasionally.
**Stir in gravy. Heat to boiling. Add turkey. Heat through, stirring occasionally.
Divide turkey and gravy mixture evenly among bread slices
**Serve with a side of green beans or broccoli flowerets.
