Banana Coconut Bread - Official Torrance Carrs Christmas Bread
Banana Coconut Bread - Great to put in toaster too!
2 cups all- purpose flour,unsifted 1 teaspoon soda 3/4 teaspoon salt 1/2 cup soft butter or margarine 1 cup firmly packed brown sugar 2 eggs 1 teaspoon vinegar mixed with 1 tablespoon milk 1 teaspoon vanilla 1 1/2 cups mashed ripe banana ( about 3 to 4) 1 cup unsweetened coconut ( I tried the recipe with 1/2 cup coconut and 1/2 cup walnuts - turned out great too)
Stir together flour, soda, and salt until thoroughly blended. In a large bowl, beat butter and sugar together until creamy. Add eggs, one at a time, beating well after each addition; beat in vine gar mixture, vanilla and bananas .
Gradually stir in flour mixture just until blended; stir in coconut.
Pour batter into a greased and flour-dusted 9 by 5 inch loaf pan.
Bake in a 350 degree oven for 1 hour and 15 minutes, until bread begins to pull away from sides of pan and a wooden skewer inserted in the center comes out clean. Let cool in pan 10 minutes, then turn out ona rack to cool completely. Wrap and store for 1 day before slicing.
