Matthew Levanthal's Pumpkin Bread

This recipe came from Mrs. Gooch's natural food recipes in her book Please Don't Feed Me Junk,1983.  

Matthew Levanthal was 9 years old when he converted this recipe and won First Prize in the bread division of Mrs. Gooch's First Bake Off.

 

1 1/2 cups sifted whole wheat flour

2 tsp. baking soda

1/1/2 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

 

Put in a large bowl and make a hole in the middle of it.  Add the following in the middle and mix well:

 

1 1/2 cups honey

1 c. oil

4 eggs

3/4 c. water

1 16 oz. can pumpkin filling

1 c. chopped walnuts (optional)

 

Pour into two greased and floured loaf pans.  Bake at 350 degrees for 1 hour and 15 min.
