 Egg Casserole
  

Make ahead Egg Casserole (good for brunches)

1 pkg. thawed shredded hash browns.
1/4 c. softened margarine or butter
2 c. shredded jack cheese or whatever cheese you like(I use a blend of shredded cheeses)
1 lb. diced cooked sausage or ham
1/2 c. milk
5 beaten eggs
salt & pepper

add squash or bell peppers, any vege you want to

This part can be done the night before:

Grease 9x13 pan.  Put hashbrowns in and spread butter on top.  Bake @ 400 for about 25 min. or until just getting brown.
Cook meat and put on top of cooked hashbrowns. Top with cheese.

In the morning:

Mix milk, eggs ,veges and s & p and pour over casserole.  Bake @ 350 for about 30 min. or until eggs are cooked.
