Garlic Eggplant Chicken

olive oil
2 onions diced
1 head garlic diced
1/2 C pine nuts

2 lbs boneless, skinless chicken breasts, cut into large pieces (4-6 per breast half)

1 red pepper, diced
1 can garbonzo beans
1 jar Trader Joes eggplant-garlic spread

fry the onions, garlic, pinenuts for a bit, then shove them to side and sear the chicken pieces
after a while add the red pepper & garbonzo beans, when they are just starting to brown, add the sauce, cover, turn down to simmer for 15 min
