2022 Beef Stew

using blue Le Creuset enamel pot

 

2.4lb Bryans chuck stew beef $24 1.5lb TJ stew beef ($15)

Feb 10, 2024:   4.15lbs Kirkland beef stew $6/lb $25

 

saute then set aside:

olive oil

1 onion

2 shallots

some diced garlic from jar

then saute the diced chuck beef to brown it

 

add 1/3 bottle red wine, worchestshire sauce, little white vinegar

 

add

herb d' provence (thyme, oregano, basil) a bay leaf or two, some rosemary from garden (or dried rosemary)

 

add diced leeks (optional)

 

move pot from stove to oven,

cook in 330 F for ~30min

then add

4 small yukon creamers from Bryans

cook for 20min more

 

then add

2 parsnips, 4 carrots

cook for 20min more

 

then add

can kidney beans

4 stalk diced celery (leave celery leaves diced for adding at end)

cook for 20min more

 

take out of oven and leave on counter for couple of hours to continue cooking and cool down for refridgerator

 

This made enough for Ian,Ramsay,Rob to have on 12/31/22 and still have enough for dinner 1/1/23 with Vic+Stacy+Rob

2 x 1.5lb beef stew from TJ was good, enough to amply serve 6 of us (Mom, me, Dan, Nan, K&K)

1 can beans

1 big can diced tomato

1 normal can (not small) tomato paste

6 large yukon potato

2 carrots

2 celery

1 garlic head

1 onion
