when I made it a week ago, Andrea said it was a bit dry

 

this time I did the follow modifications:

made double batch

  • 3 eggs (so 50% more)
  • 2 C milk + maybe 1/4 or 1/3C more
  • instead of 2/3C canola, did almost 1C canola
  • instead of 4/3C sugar did 2/3 (so halved the sugar)
  • 3/2C whole wheat flour and 1/2C white flour

So my ingredients list ended up being:

  • 3/2C whole wheat flour
  • 1/2C all-purpose flour
  • 2C yellow cornmeal
  • 2/3C white sugar
  • 2.5 tablespons baking powder
  • 2 teaspons salt
  • 2.5C milk
  • 7/8C canola oil
  • 3 large eggs

Cook in 400f oven for 25min

 

This fills 2 pie tins.  I can freeze one half.

Ingredients

1 cup all-purpose flour

1 cup yellow cornmeal

⅔ cup white sugar

3 ½ teaspoons baking powder

1 teaspoon salt

1 cup milk

⅓ cup vegetable oil

1 large egg

 

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch round cake pan.

  2. Whisk flour, cornmeal, sugar, baking powder, and salt together in a large bowl. Add milk, vegetable oil, and egg; whisk until well combined. Pour batter into the prepared pan.

  3. Bake in the preheated oven until a toothpick inserted into the center of the pan comes out clean, 20 to 25 minutes.
