2024 Leek-Kale-Apple Fry Salad or Leek-Sauerkraut
I invented this and served it for Ian+Andi bday dinner Mar 5, 2024
very super tasty
1/2 onion
3 tbsp diced garlic
olive oil
1/4 C pine nuts
4 leeks washed and chopped medium fine
1/8 C hemp hearts (optional)
1 head Kale finely chopped
1 apple diced into 1/4" pieces
salt & pepper to taste
saute diced onion and garlic in olive oil
add pine nuts
when onions are clear and pine nuts just starting to brown, add the leeks and continue to sautee
stir frequently
add hemp hearts
when onions and pine nuts are browning more, add Kale, stir frequently to soften + wilt the Kale some
turn off heat and stir in apple
serve
Mar 16, 2024 I invented a variation on the above for dinner with Dan,Nan,Marie
I substituted chopped walnuts for pine nuts, and only added these at end (along with diced apple) so the walnuts wouldn't get mushy
I substituted a bunch of sauerkraut for the kale
I added some raisins at end just a bit before finishing the sautee
