Teriyaki Hanger steak
To make a perfect teriyaki marinade for hanger steak, whisk together $\frac{1}{2}$ cup soy sauce, $\frac{1}{4}$ cup brown sugar, 2 tablespoons mirin or sake, 1 tbsp sesame oil, 2 minced garlic cloves, and 1 tsp grated ginger. Hanger steak is a loose-textured cut of beef with a robust, almost minerally, flavor. A teriyaki blend adds savory umami, sweetness to balance the beef, and acid or enzymes to tenderize. [2, 6, 7, 8, 9]
Ingredients
1/2 cup Soy Sauce (or Tamari)
1/4 cup Brown sugar or honey
2 tablespoons Mirin (Japanese sweet cooking wine) or sake
1 tablespoon Sesame oil
2 cloves Garlic, finely minced or grated
1 teaspoon Fresh ginger, peeled and grated

Step-by-Step Instructions
Prep the steak: Pat your hanger steak dry with a paper towel. If necessary, trim away any hard silver skin or connective tissue running through the center.
Mix the marinade: In a bowl, whisk all the ingredients together until the sugar is fully dissolved.
Marinate: Place the hanger steak in a shallow dish or a heavy-duty zip-top bag. Pour the marinade over the meat, ensuring it is fully coated. Refrigerate for 2 to 4 hours. Because hanger steak is tender enough on its own, avoid marinating it for more than 6-8 hours, or the meat can become mushy.
Cook: Remove the steak from the marinade and shake off the excess liquid (discard the leftover marinade). Grill or cast-iron sear the hanger steak over medium-high heat for about 4 to 5 minutes per side for a perfect medium-rare.
Rest and Slice: Let the steak rest for 10 minutes before slicing. Cut against the grain for maximum tenderness. [2, 4, 13]
